James' Lemon Budino Recipe
A family favorite - recipe from first job at Green House Restaurant in Gig Harbor, WA
Makes 6 individual servings - may be doubled or tripled. Bake in individual sized custard cups or ramekins.
Ingredients:
3 eggs
1/2 cup sugar
1/4 cup flour
1/4 cup + 1 tbsp lemon juice
1 tbsp fresh lemon zest
dash of salt
sweet whipped cream
1. Preheat oven to 350°.
2. Butter six 6 oz custard cups.
3. Zest lemon, then juice lemon - add additional bottled lemon juice to equal full amount needed.
4. Separate egg whites from yolks.
5. Combine egg yolks, sugar, flour, lemon juice. Mix well with fork.
6. Beat egg whites with dash of salt until stiff peaks form.
7. Gently fold egg whites into egg yolk mixture - do not over mix.
8. Use ladle to divide mixture into six buttered custard cups.
9. Bake for 25 minutes at 350° in water bath (placing custard cups into 9x13 baking dish, surrounded by water works well).
10. Carefully remove from oven / water bath and let cool.
11. Refrigerate for several hours before serving.
12. Top with whipped cream at time of serving!

James' Balsamic Flank Steak Marinade
Mix all of the following together & marinate flank steak for 1-3 hours. Then grill to desired doneness.
1/4 cup balsamic vinegar
1/4 cup olive oil
Juice of one lemon
2 tsp Worcestershire sauce
1 tsp oregano
1 tsp sea salt
1/2 tsp minced garlic
1/2 tsp onion powder
1/4 tsp black pepper
Mix all of the following together & marinate flank steak for 1-3 hours. Then grill to desired doneness.
